Chickpea 'Tuna' Mayo Sandwiches

Most of us have grown up with cheese, egg and meat fillings in our sandwiches, making veganism feel pretty restrictive in the sandwich department. Worry no more! This takes a matter of minutes and if you can resist eating it all straight away, can be kept in the fridge for use throughout the week. Perfect for working lunches! 

This recipe can also be added to pasta to make a tuna pasta.

Ingredients:

  • 2 slices of bread

  • 1 can of chickpeas

  • 1 heaped tbsp vegan mayo

  • 2 chopped spring onions (scallions)

  • Small tin of sweetcorn

  • 1 tsp garlic granules

  • 2 tsp lemon juice

  • 1 tsp paprika

  • Salt and pepper

Method:

  1. Drain a can of chickpeas and empty into bowl.

  2. Mash the chickpeas with a fork or masher.

  3. Mix in all the other ingredients.

  4. Spread between two slices of bread.
