Bruschetta

I always order this in restaurants and I never realised how easy it was to recreate. Great as a starter for a dinner party or a quick, flavour packed summer lunch. Here's how to make it on the cheap!

Ingredients:

  • Bread (crusty bread such as ciabatta, baguette etc., most are vegan)

  • 2 handfuls of cherry tomatoes 

  • 1 tbsp olive oil

  • 1/2 chopped red onion

  • 1 tsp garlic granules

  • 1 tsp dried basil

  • 1 handful of spinach

  • 1 tbsp balsamic vinegar

Method:

  1. Toast your bread under the grill until lightly browned.

  2. Half the cherry tomatoes, dice the red onion and shred the spinach leaves. Add these items to a bowl with the olive oil, balsamic vinegar and seasonings.

  3. Stir all the ingredients together well and place on top of the bread. Enjoy!
